Wow, it is already April, spring is definitely in the air, and so are some new produce items that are in-season. Check out the list and give some of the recipes a try. I would love any feedback on the recipes, too.
April In-Season Produce

- Beetroot – beets are one of those vegetables you either love or hate, which are you? A lover or hater? I am the only one in our house who likes them. Roasted Beetroot Recipes
- Celeriac/Celery Root – Creamy Cauliflower and Celeriac Soup with Roasted Shiitake Mushrooms
- Chicory – Chicory Root Maple and Almond Milk Latte (this one sounds very yummy).

As we progress into spring and summer, you will find more local produce available. I encourage you support your local CSA or farmers markets. This provides you with the freshest and nutrient dense foods available, and most important – they taste so much better when they are able to ripen naturally. Reminder to check out the 2019 Dirty Dozen and Clean 15 List, too.
Be Blessed and enjoy your fresh produce,
Heather
